This recipe was inspired by a recipe I spied on the Kitchn, one of my favorite sites for recipes and kitchen tips. Since our return from India, I just can’t bring myself to use the standard grocery”curry powder” anymore. There is simply nothing curry-like about it. For this recipe, I used a very special blend that I hand carried home from Mrs. Rita. I’m working on getting her recipe to share with you, until then, cruise to your local Indian grocery (believe me, you have one!) or Amazon and pick up a box of Kitchen King masala spices, it will do in a pinch and chili masala is the new Old Bay. Use it in your morning scramble or on the rim of your next bloody mary.
